The collection of éclairs by Head Pastry Chef Julien Beaulieu can be enjoyed on the premises or as a takeaway. Beaulieu revisits this great French classic with fresh local flavours: bilberry-violet, Menton lemon, calisson (a Provençal sweet made of ground almonds), strawberry-basil, Piedmont hazelnut, Montélimar nougat, rose-raspberry, and Tropézienne (traditionally a cream-filled brioche). The Princess of Monaco éclair, a subtle combination of chocolate and raspberry, was created to mark the partnership between the hotel and the Fight AIDS association chaired by Princess Stéphanie.
The drink menu is enhanced with coffee-based specialities created by Master Barista Serge Depoisier, a true coffee sommelier. His suggestions awaken the senses through innovative combinations, such as rose-scented coffee and mojito coffee. Lamponilly—his coffee, vodka, and raspberry creation—was awarded at the 2012 Taste of Discovery Challenge organised by illy and Le Méridien.

Head Barman Yohann Loustaud was inspired by local references and ingredients and added an effervescent twist. Using the colours of the Monegasque flag, the Monaco Crush is a delicious combination of passion fruit and beer. The Fantas’tea transforms aniseed and fig into a surprising lemon-flavoured tea. Let’s Get Physical combines peach, lavender, and tarragon into a tasty trilogy mixed with Cointreau and soda.
