Located in a magnificent two-storey structure directly on the edge of the hotel’s main pool, the chic, lively Latest Recipe enjoys uninterrupted views of the ocean. Shaded by a high Thai pavilion roof, the front of the restaurant is entirely open to the gentle sea breeze. Floor-to-ceiling columns artfully divide each floor into separate dining areas.
The second floor features oversized upholstered chairs around dark wooden tables and sofas that face the idyllic pool, beach, and ocean. On the first floor, dark rattan chairs and persimmon-colored sofas are clustered around wooden tables—lit by gorgeous deep-red Chinese lanterns. Further down along the pool’s edge, three sunken areas provide intimate islands of seating for up to four diners each, lit by their own gracefully arched lanterns.
The delightful à la carte menu for lunch and dinner features fresh local ingredients, gourmet imported meats, and vibrant traditional spices. Signature dishes include succulent rack of lamb, ocean-fresh salmon and prawns, and imported Australian sea scallops.
Every morning, guests may enjoy the innovative Le Méridien signature buffet breakfast, featuring six exceptional dishes created exclusively for the hotel by acclaimed chef Jean Georges Vongerichten. Le Méridien “Eye Opener” shots offer a bold taste of discovery with unexpected pairings of pureed fruits and spices, while the rich aroma of illy coffee adds a bold note to the morning.
