Designed by Jean-Philipe Nuel, the restaurant showcases a contemporary style kept in shades of red, brown, and black. The sleek bar and tables are made from deep red lacquered mahogany, surrounded by modern red, white and purple leather armchairs. Mirrored globe light fixtures are suspended along the window front, while a cluster of black pendant lights hangs over a central high table. Gauzy screens afford a sense of intimacy.
Under the auspices of Chef Hervé Chatrieux, Ma Chère & Tendre dedicates itself to serving the finest beef from around the world. The menu is divided by region—encouraging guests to explore the distinct flavours of French and Bavarian beef, as well as Black Angus beef from Ireland, Argentina, and the United States. A selection of homemade sauces such as Bearnaise and Chimichurri, as well as side dishes like gratin of macaroni with oxtail and Parmesan complement each meal perfectly. A tasting menu offers the opportunity to taste five types of beef, beautifully prepared as tartare, fillet, rib eye, skewers, and hanger steak—all accompanied by five sauces and two savoury sides.
For our youngest guests, a dedicated children’s menu features favourites like the cheeseburger and homemade fries, fresh salmon filet, and juicy rump steak.
The superb wine list—ingeniously served by the bottle or the glass—features some of the finest varietals from France, Spain, Argentina, and the United States. Established in 1975 at the heart of the hotel, the legendary Jazz Club Etoile was created as a collaboration of former music booker Jean Pierre Vignola and Jonathan Miltat, an experienced producer of numerous jazz artists and festivals. The club has historically served as an epicentre of jazz, soul, funk, and rhythm and blues.
Today, the club returns to the limelight with a reworked musical programme and concerts that pay homage to jazz legends and quirky emerging talents. Its mid-century modern style facilitates creative experiences and provides optimal comfort and an intimacy between artists and spectators.
Mixing beloved classics with contemporary creations, the Jazz Club team has developed a menu to perfectly reflect the club’s soul. Some 30 cocktails are accompanied by more than 90 aperitifs and digestifs.
Executive Chef Benjamin Barrere offers a menu of finger foods and shared plates. Select from charcuterie, mature cheese boards, a gourmet club sandwich, and croques monsieur.
The club’s restaurant and bar are open to the public during the day and in the evening, aside from concerts.

Our restaurant Espace Latitude delivers a delicious start to the day with its inventive breakfast and Sunday brunch. Kept in light airy colours accented by dark grained wood and gauzy floor-length curtains, the interiors strike a calm note. Sleek wood and white chairs stand around brushed metal tables. The high white ceiling is emblazoned with a stylised sun pattern, while the moss green and gold carpet looks like dappled sunlight filtered through tree branches. A floor-to-ceiling wall of windows frames the lush courtyard garden and patio.
Executive Chef Benjamin Barrere takes the start of your day seriously with his delectable menu and buffet selections. Locally sourced organic breads augment a scrumptious assortment of fresh baked breakfast pastries—including pain au chocolat and buttery brioche.
