German-born Gerhard Schwaiger has been the heart and soul of the Tristán restaurant in Mallorca’s Puerto Portals yacht marina since 1986. He has won numerous awards, has held two Michelin stars for 19 years and is today one of the big names in the European gourmet cuisine scene.
