Signature dishes include traditional free-range chicken mole stuffed with dried fruits and blanketed in red mole sauce with toasted sunflower, almond and sesame seeds. Las Marietas' ceviche is marinated in lemon and scented with fine herbs.
Colorful details include banquettes lined with hand-embroidered pillows, their patterns borrowed from the traditional dresses of the women of Chiapas.
