The restaurant’s menu perfectly captures the spirit of the island, weaving signature dishes with a curated selection of Jean-Georges Vongerichten’s greatest appetizers, simply grilled entrees, tantalizing side dishes, and bold accompaniments, all prepared with the highest quality local ingredients available.
Signature dishes include an exotic appetizer of grilled black pepper octopus served with Kula onions and lime; a crispy poached egg with caviar and vodka crème fraiche; and moi nut and mustard seed-crusted fish. Desserts include a white chocolate and yuzu pavlova with Thai basil syrup.
At the center of the dining room, a spectacular spiraling fabric ceiling in the shape of a nautilus shell lends a dramatic and intriguing glow by night and complements the sweeping views by day. Spilling from the center of the nautilus, a handcrafted fiber optic and ruby glass hibiscus chandelier echoes the surrounding mountain waterfalls and Hawaii’s indigenous flora. The restaurant is draped in a rich palate of cocoa, ruby and cognac, accenting plush leather as well as bronze and zebra woods.
