The tempting teppan grill is also always ablaze with a symphony of sauces, like wasabi and sea urchin roe butter for Tasmanian ocean trout or saikyo miso and gorgonzola, which flawlessly garnish a Matsusake steak. From crisp skin master stock chicken to Korean pickled romaine salad to miso-braised Kobe beef cheeks with bonito crumbed scallops and edamame, the epicurean inventions abound.

And don’t forget to indulge in dessert. Equally original, the sweet options range from scented jelly of stone fruit and grilled azuki bean pancakes to green tea sweet tofu and a pineapple and ginger granita.
