Azure is a specialty island seafood restaurant helmed by award-winning Chef Jon Matsubara, who honed his masterful culinary knowledge at dining stand-outs including Stage, Jean Georges, Tabla, Bouley and Honolulu’s acclaimed Alan Wong’s Restaurant.
As the Chef de Cuisine at Azure, Chef Matsubara’s menu features locally caught fish selected each morning at daybreak from the Hawaii Fish Auction, the only one of its kind between Tokyo and Maine. Open at 5:30 pm with the ringing of a brass bell, Hawaiian longline fisherman auction off their day's catch, which become Azure's daily market specials in just a few short hours. Guests are invited to choose between high heat aromatic herb roasting or preparation with local flavors for this freshest of fish. The kona shellfish bowl, which includes lobster, prawns, clams, scallops, abalone mushrooms, konyaku noodle, kaffir lime & chile broth, is a menu highlight and a true indulgence for seafood lovers. Expert servers and sommeliers provide intuitive recommendations for the perfect wine pairing to accent the delicate flavors of the ocean.
