A fervent supporter of local produce, he has composed a typically Quebec-themed menu that highlights: Homemade Smoked Salmon fillet in a light cream and Pistil of Trout Caviar; Cream of Chicken with local apples; Pork Fillet Crusted with floral farm coat cheese; and Blueberry Delight with Sortilège Sauce for dessert.
