Bloody Mary

In 1934, famed barman Fernand Petiot perfected the recipe for a vodka-and-tomato juice cocktail at The St. Regis New York's King Cole Bar. Originally christened the "Bloody Mary", the cocktail was initially dubbed the "Red Snapper" so as not to offend the hotel's refined clientele. More than 80 years later, the iconic Bloody Mary remains the signature cocktail of the St. Regis.

Bloody Sunrise
Ingredients:
  • 1 oz / 30 ML premium vodka
  • 11oz /325 ML Bloody Mary mix
  • 1 lemon wedge, for garnish
The Signature Bloody Mary Mix:
  • Juice of 3 lemons
  • 2 ½ #10 cans/2 ½ L tomato juice
  • 5 oz / 150 ML Worcestershire sauce
  • 10 dashes / 3 ML Tabasco sauce
  • 2 tbsp / 30 G freshly ground black pepper
  • 2 tbsp / 30 G ground cayenne pepper
  • 1 tbsp / 15 G ground celery salt
  • 2 tbsp / 30 G whole black peppercorns
Directions:
  1. Fill 12 oz / ½ L. Blood Mary glass with ice.
  2. Add vodka.
  3. Fill glass with Blood Mary mix and garnish with lemon.
  4. Pour ingredients into a container and shake well.
  5. Use immediately or seal and refrigerate.
  6. Strain peppercorns from mix before adding alcohol.
  7. Makes 3 gallons / 11 L.

Desert Snapper
Ingredients:
  • 1 tsp / 3 g za'atar
  • ½ tsp / 3 ML lemon juice
  • 5 tbsp / 75 ML tomato juice
  • 1 tbsp / 25 ML cucumber juice
  • 2 tbsp / 40 ML lemon vodka
  • 5 drops Tabasco sauce
  • Handheld smoker (optional)
  • 1 cherry tomato
  • 1 tbsp / 15 ML olive oil
  • 1 cucumber slice, for garnish
  • 1 lime twist, for garnish
  • 3 chickpeas, for garnish
Directions:
  1. Set aside a pinch of za'atar for the handheld smoker.
  2. Rim a classic margarita glass with za'atar and lemon juice.
  3. Pour the tomato juice, cucumber juice, lemon vodka and the remaining lemon juice into a Boston shaker.
  4. Add the Tabasco sauce, remaining za'atar and ice.
  5. Smoke ingredients with the pinch of za'atar.
  6. Cover and shake well.
  7. Double strain and pour into the glass.
  8. Dip the tomato in the olive oil and add to the cocktail.
  9. Garnish with the skewered cucumber slice, lime twist and chickpeas.
  10. For a nonalcoholic version, omit lemon vodka and use 3 oz / 90 ML tomato juice and 1 oz / 30 ML cucumber juice.

Ingredients:
  • 4 ½ oz / 130 ML tomato juice
  • 4 ½ oz / 130 ML V8 juice
  • ½ oz lime juice
  • ½ oz Bloody Mary seasoning
  • ¼ oz horseradish
  • ½ oz Worcestershire sauce
  • 1 tbsp / 15 g kosher salt
  • Few dashes of Tabasco sauce
  • Rose-Infused vodka

  • 2 branches of dill

  • 1 branch of basil
  • One 750 ML bottle premium vodka
  • Garnish
  • 1 cornichon
  • 2 olives on a skewer
  • 1 lime wedge
  • Salted rim
Directions:
  1. Infuse vodka by placing 2 branches of dill and 1 branch of basil in a 750 ML bottle of premium vodka.
  2. Close the bottle and infuse heat-free for 2–3 days.
  3. Combine ingredients for The St. Regis Aspen Resort Signature Bloody Mary Mix.
  4. Refrigerate overnight, 6–8 hours minimum. Salt rim of a tall Collins glass and fill with ice.
  5. Pour 1 ½ oz of infused vodka followed by 11 oz of Bloody Mary Mix over the ice.
  6. Garnish.

In 2017 The St. Regis Astana joined with esquire.kz to celebrate the rich history of the Bloody Mary and to invite readers to suggest innovative ingredients for the hotel’s signature cocktail. The result was a unique celebration of creativity, culture and flavor inspired by the breathtaking spirit of the vast Steppe of Kazakhstan. The Nomad Snapper unites the distinctive flavors of kurt cheese, adjika chili dip and Aral Sea salt, while a kurt cheese and wheat bread infusion adds a stylish touch. An elegantly architectural glass recalls the iconic Bayterek monument, representing the meeting of the ancient and the modern.

Nomad Snapper
Recipe for one cocktail (7 oz / 200 ml)
  • 1.75 oz / 50 ml bread-infused vodka
  • 3.5 oz / 100 ml tomato juice
  • 1.75 oz / 50 ml tomato premix
  • Grated kurt cheese powder and 2 bread sticks for garnish
Vodka bread infusion
  • 34 oz / 1 liter premium vodka
  • 4 1 in / 2.5 cm balls kurt cheese, grated
  • 6.75 oz / 200 g wheat bread
  • Infuse vodka by placing grated kurt cheese and wheat bread in a jar. Close the jar and infuse heat-free for 7 days.
Tomato premix for one cocktail
  • 2 grilled tomatoes
  • ½ tsp / 2.5 ml adjika chili paste
  • 3 dashes Tabasco sauce
  • 3 dashes Worcestershire sauce
  • 1 dash Aral Sea salt
  • Stir and mix all ingredients in a cup until the density is like a puree.
Directions:

Dry shake infused vodka, tomato juice and tomato premix, and pour into highball glass with wide top. Add grated kurt cheese powder and 2 bread sticks as garnish.

  • 4 ½ oz / 140 ML canned tomato juice
  • Juice of half a lemon
  • 1 tsp / 5 ML Worcestershire sauce
  • ½ tsp / 2 ½ g black pepper
  • 3 dashes Tabasco sauce
  • ¼ tsp / 1 g cayenne pepper
  • ¼ tsp / 1 g celery salt
  • 1 tsp / 3 g black peppercorns
  • 2 tbsp / 18 g fresh horseradish
  • 1 tbsp / 15 ML pickled okra juice
  • 1 oz / 30 ML premium vodka
  • 2 pickled green tomatoes, for garnish
  • 1 celery stalk, for garnish
Directions:
  1. Combine all of the ingredients.
  2. Shake well and pour into footed pilsner glass filled with ice.
  3. Garnish with skewered tomatoes and the celery stalk.

Directions:

  • 2 key limes, sliced, plus more for ice cubes
  • Simple syrup
  • 1 pinch celery salt
  • 1 pinch coarse black pepper
  • 1 pinch crushed red pepper
  • ½ tbsp / 7 ½ ML Worcestershire sauce
  • ½ tbsp / 4 ½ g grated fresh
  • horseradish root
  • 2 oz / 60 ML Clamato® picante juice
  • 2 oz / 60 ML tomato juice
  • 1 ½ oz / 45 ML premium vodka
  • 1 dried lemon slice, for garnish
  • Organic celery, carrot and tomato, skewered on a small metal skewer (pincho), for garnish
Directions:
  1. Prepare lime-juice ice cubes by mixing 6 parts fresh lime juice, 2 parts water and 2 parts simple syrup.
  2. Pour into
an ice tray and freeze.
  3. For the Bloody Sunrise Mix: Muddle the limes, salt, black and red peppers, Worcestershire sauce and horseradish.
  4. Add the Clamato and tomato juice.
  5. Shake well.
  6. Place the lime-juice ice cubes in a highball glass.
  7. Add vodka and top with Bloody Sunrise Mix.
  8. Garnish with the lemon slice and skewered organic vegetables.

  1. Blend all ingredients with ice until frothy.

Ingredients:
  • 1 ½ oz / 45 ML vodka infused with hibiscus flower
  • 4 oz / 120 ML tomato juice
  • 3 drops Tabasco sauce
  • 3 dashes Worcestershire sauce
  • 1 pinch cumin
  • 1 pinch pepper
  • 1 pinch salt
  • 1 pinch hibiscus salt
  • 1 dash mint bitter
Vodka Infusion:
  • 1 cup / 250 ML of dry hibiscus flower
  • 5 oz / 120 ML premium vodka
  1. Mix the vodka with the dry hibiscus flower.
  2. Leave the infusion for 24 hours.
  3. Strain and leave the liquid refrigerated until use.
Salt Preparation:
  • ½ cup/125 ML salt
  • 1 cup / 250 ML of dry hibiscus flower
  1. Grind both ingredients and keep dry.
Garnish:
  1. Fresh hibiscus flower
Directions:
  1. Crust a highball glass with the hibiscus salt.
  2. Pour 3 or 4 drops of mint bitters inside the glass to aromatize and then shake the drops out of the glass.
  3. Put the tomato juice, vodka, Tabasco sauce, Worcestershire sauce, cumin, pepper and salt, together with ice, in a shaker.
  4. Instead of shaking, pour the ingredients from one glass to another 3 or 4 times.
  5. Serve in the encrusted glass, and decorate with a fresh hibiscus flower.

Infused with the spirit of Changsha, the Baijiu Mary combines fresh flavors from Hunan Province with Baijiu, a traditional Chinese liquor.   • 10 g (0.35oz) local fresh red chili, medium bodied
  • 15 ml (0.5 oz) fresh lemon juice
  • Dash of soy sauce
  • Dash of Worcestershire sauce
  • 120 ml (4 oz.) tomato juice
  • 15 ml (0.5 oz) Baijiu (Chinese liqueur distilled from fermented sorghum), also known as sorghum wine
Glassware:
  • red wine glass (#07 ml-10.4 oz)
Directions:
  1. Wash the chili, then peel it and remove the seeds.
  2. Blend the chili, fresh lemon juice, soy sauce, Worcestershire sauce and tomato juice.
  3. Prepare the glass with ice and pour the Chinese liquor into the glass.
  4. Next, pour the Mary mix into the glass and stir well.
  5. Garnish with a long slice of cucumber and a spiral of orange peel.

  • 3 drops green Tabasco sauce
  • 3 drops Sichuan Sweet Soy Sauce
  • 1 piece Confit Chili, for garnish
Confit Chili:
  • ½ cup / 100 g sugar
  • 1 árbol chili, seeded
  • 4 oz / 120 ML water
Sichuan Sweet Soy Sauce:
  • 3 oz / 90 ML light soy sauce
  • 3 oz / 90 ML dark soy sauce
  • 2 tbsp / 25 g sugar
  • 2 tbsp / 30 ML vegetable oil
Directions:
  1. Rim a 6 oz / 180 ML martini glass with a mixture of the sea salt and crushed Sichuan pepper.
  2. Combine the vodka, tomato juice, Sichuan pepper powder, Tabasco sauce and Sichuan Sweet Soy Sauce in a shaker.
  3. Shake with ice and pour into the glass.
  4. Stir once and garnish with the Confit Chili.
  5. To make the Confit Chili, boil the sugar and water until the sugar dissolves.
  6. Add the chili and boil for 1 minute more.
  7. Let cool.
  8. To make the Sichuan Sweet Soy Sauce, mix the ingredients together and boil for 4 minutes.
  9. Let cool.

  • ½ oz / 15 ML fresh lime juice Harissa paste to desired spiciness
  • ½ tsp / 2 G ground cumin
  • ½ tsp / 2 G ginger powder
  • 1 oz / 30 ML premium pepper vodka
  • 1 celery stalk, for garnish
  • 1 lemon wedge, for garnish
  • 1 tsp / 5 ML Saffron Oil
  • 2 tsp / 10 ML Worcestershire sauce
  • ½ tsp / 2 G black olive powder
  • ½ tsp/2 G ras el hanout
Saffron Oil:
  • 1⁄4 tsp/1 g saffron
  • 1 oz/30 ML olive oil
Directions:
  1. Rim an 8 oz / l highball glass with the lemon salt and sumac powder.
  2. Pour the tomato, V8 and lime juices over ice into a Boston shaker.
  3. Add the harissa paste, cumin, ginger and vodka.
  4. Shake well and strain into glass.
  5. Garnish with celery stalk and lemon wedge.
  6. Layer the surface of the drink with the Saffron Oil and Worcestershire sauce, and dust the surface with the black olive powder and ras el hanout.
  7. To make the Saffron Oil, dissolve the saffron in a few drops of water.
  8. Whisk in the olive oil.
  9. Let settle for 48 hours.
  10. Strain, store in a covered container and refrigerate.
  11. For a nonalcoholic version, remove premium pepper vodka and use 3 oz / 90 ML tomato juice and 3 oz / 90 ML V8 juice.

  • ½ oz / 15 ML fresh lemon juice

  • 1 dash horseradish sauce
  • 2 dashes Worcestershire sauce
  • 2 dashes sea salt
  • 5 dashes Tabasco sauce

  • 1 celery stalk, for garnish
  • 1 dash edible gold leaf flakes, for garnish (optional)
Rose-Infused Vodka:
  • 10 oz / 280 g fragrant unsprayed rose petals
  • One 750 ML bottle premium vodka
Directions:
  1. Combine the date paste with the red pepper flakes.
  2. Mix with the remaining ingredients in a mixing glass, except for the garnishes.
  3. Pour into an 8 oz / 1/5 L highball glass filled with ice cubes.
  4. Garnish with the celery stalk, and top it off with a dash of gold leaf, if using, for a little extra Dubai glamour.
  5. To make the Rose-Infused Vodka, combine the rose petals and vodka in a clean jar.
  6. Set aside for 7 to 30 days.
  7. Strain and transfer to a clean bottle.

  • 2 oz / 60 ML tomato juice

  • 1 sprig red basil, for garnish
  • Dry ice
Fermented Red Turnip Juice:
  • ½ medium turnip
  • ½ medium beet
  • 2 ¼ lb / 1 kg black carrots
  • ½ slice white bread
  • 2 tsp / 10 g lemon salt (citric acid)
  • 1 ½ tbsp / 22 g edible rock salt
Directions:
  1. Combine the vodka, raki, fresh thyme, celery juice, turnip juice and tomato juice in a raki glass.
  2. Top up with ice and add the salt, pepper, Tabasco and Worcestershire sauces, and lemon juice.
  3. Stir gently and garnish with red basil.
  4. Serve in an ehl-i keyf, a traditional copper bowl, with ice.
  5. Add dry ice for
a misty effect.
  6. To make the Fermented Red Turnip Juice, peel the turnip, beet and carrots and slice them.
  7. Put the bread in cheesecloth and tie it tightly.
  8. Put all ingredients, except the rock salt, into a clean 2 ½ gal / 10 l fermenting crock.
  9. Dissolve the rock salt in a small pot of boiling water and pour over the ingredients in the crock.
  10. Finally, fill the crock with water and cover tightly.
  11. Don't uncover the crock for 15 days to ensure good fermentation.
  12. Strain the juice and transfer to a clean crock or clean jars.

Ingredients:
  • 1 ½ oz / 45 ML Assam Boi–infused vodka
  • 5 oz / 150 ML tomato juice
  • 5 oz/150 ML V8 juice
  • 1 ½ oz / 50 ML calamansi juice
  • ½ tbsp / 7 g Sarawak black pepper
  • ½ tbsp / 7 g paprika
  • ½ chili padi
  • 10 dashes Tabasco sauce
Glassware:
  • Highball glass, 400 ML
Directions:
  1. One day in advance infuse 750 ML of vodka with 8 Assam Boi.
  2. Prepare the Bloody Mary Mix by combining the tomato and V8 juices, calamansi juice, Sarawak black pepper, paprika, chili padi and the Tabasco sauce.
  3. When ready, rim half of the highball glass with Assam Boi dust and fill it with ice.
  4. Pour in 45 ML of the infused vodka and strain the Bloody Mary Mix into the glass.
  5. Garnish with the inner part of a celery stalk, including the celery leaves.
  6. On a cocktail stick place a wheel of calamansi lime and one chili padi.

The St. Regis Saadiyat Island Resort, Abu Dhabi,
has crafted its signature cocktail with za'atar, a spice prized since antiquity. This za'atar is mixed with oregano, thyme, basil, sesame seeds and salt to imbue the Arabian Snapper with flavors redolent of the region's rich and storied culture.

Arabian Snapper
Ingredients:
  • 5 oz / 150 ML premium tomato juice
  • 1 ½ oz / 45 ML premium vodka
  • 1 tsp / 5 g cumin powder
  • 6 tsp / 30 g za'atar
  • 4 dashes Angostura® bitters
  • 4 dashes Tabasco sauce
  • 2 dashes Worcestershire sauce
  • 3 tsp / 15 g freshly ground black pepper
  • Juice of quarter of a lemon / 10 ML fresh lemon juice
  • 1 lemon slice, for garnish
  • Cherry tomato, halved, for garnish
  • 1 sprig of thyme, for garnish
Directions:
  1. Combine the tomato juice, vodka, cumin and 4 tsp of the za'atar in a cocktail shaker.
  2. Stir until well mixed.
  3. Add the Angostura bitters, Tabasco and Worcestershire sauces, pepper, lemon juice and ice cubes.
  4. Shake well.
  5. Pour into an 8 oz / l highball glass.
  6. Garnish with the remaining za'atar, the lemon slice, cherry tomato half and sprig of thyme.
  7. For a nonalcoholic version, omit lemon vodka and use 60 oz / 195 ML tomato juice.

Inspired by the signature color of its namesake, the iconic Golden Gate Bridge, as well as by the warm hues of a Pacific sunset, the Golden Gate Mary uses red- and-orange-toned ingredients - from tomatoes to chili powder - to give it a stunning shade of vermilion.

Golden Gate Mary
Ingredients:
  • 1 lb/454 g or 1 large can of tomatoes
  • 1 pinch chili powder
  • For the rim: salt, black pepper, celery salt, horseradish and dried lemon zest
  • Worcestershire sauce
  • 4 oz / 110 ML premium tequila
  • 1 dried heirloom tomato chip, for garnish
Directions:
  1. To make the chili pepper–infused tomato water, rough chop fresh or canned tomatoes and strain through cheesecloth into a large bowl.
  2. Add chili powder to water, cover and refrigerate overnight for 6 to 8 hours.
  3. Wet a 16 oz / ½ l martini glass with Worcestershire sauce and dip in the salt, pepper, celery salt, horseradish and dried lemon zest mixture.
  4. Combine the tequila and 2 oz / 55 ML chili pepper– infused tomato water and shake with ice.
  5. Then strain into the glass.
  6. Serve chilled.
  7. Garnish with dried heirloom tomato chip.

Ingredients:
  • 1 ½ oz / 45 ML premium vodka
  • 4 oz / 120 ML tomato juice
  • ⅔ oz / 20 ML pineapple juice
  • ½ oz / 15 ML Hainan green lime juice
  • 2 pinches Hainan white pepper
  • 1 pinch Hainan yellow chili powder
  • 1 pinch sea salt
  • 1 sprig lemongrass, for garnish
Directions:
  1. Add the vodka, tomato juice, pineapple juice, lime juice, pepper, chili powder
and sea salt to a cocktail shaker with ice cubes.
  2. Shake well and strain into a short tumbler filled with ice.
  3. Garnish with the lemongrass.
  4. Present on a slate plate with
a spice grinder and some fresh ingredients from the recipe for color, including a Hainan green lime, a Hainan yellow chili and a pinch of sea salt.

Dried, preserved figs are a much-beloved treat, and flowering osmanthus lends its distinctive scent throughout the city in late autumn. The word Jing evokes the location of the hotel itself, one of the most prominent areas of Shanghai’s city center. In addition, Jing lends the spirit of its meaning—a sense of peace—to the signature cocktail of The St. Regis Shanghai Jingan.

  • 1 ½ oz / 45 ml Dried fig–infused vodka
  • 2 oz / 60 ml Juice of fresh yellow tomatoes
  • ½ oz / 15 ml Fresh lemon juice
  • ⅓ oz / 10 ml Osmanthus honey
  • Orange wedge and osmanthus flowers, for garnish
Directions:
  1. Prepare the glass with ice
  2. Infuse 23 oz / 690 ml vodka with ⅔ oz / 20 g dried figs for 5 days
  3. Squeeze juice from 10 fresh yellow tomatoes
  4. Put all ingredients in a Boston shaker
  5. Shake well
  6. Pour the Mary mix into the glass
  7. Garnish with orange wedge and some dried osmanthus flowers

The Chilli Padi Mary is inspired by the myriad influences found in Singaporean culture, at the crossroads of Asia. This libation incorporates ingredients found throughout the region. Lemongrass, chilli padi and ginger give this cocktail a distinct spiciness that reflects Singapore's eclectic cuisine.

Ingredients:
  • 1 oz / 30 ML premium vodka
  • 1 piece lemongrass, about 1 in / 2 cm thick
  • 1 slice fresh gingerroot (mature/old)
  • ½ thinly sliced chilli padi, seeds removed
  • ⅛ tsp / ½ ML sugar syrup
  • 3 oz / 90 ML tomato juice
Directions:
  1. Muddle the vodka, lemongrass, ginger, chilli padi and sugar syrup together.
  2. Strain and pour into a rocks glass filled with ice.
  3. Add tomato juice, stir and serve.

  • 2 ½ oz / 75 ML chilled tomato juice
  • 1 oz / 30 ML premium vodka
  • 1 dash Chinese chili oil
  • 1 dash soy sauce
  • 1 pinch sea salt
  • 1 pinch ground Chinese Sichuan pepper
  • 1 celery stalk, for garnish
  • 1 cherry tomato, for garnish
Directions:
  1. Brew the tea for two minutes and then let it cool.
  2. Blend the tea and tomato juice.
  3. Fill a 16 oz / ½ L martini glass with ice cubes and add the juice blend, vodka, chili oil, soy sauce, sea salt and pepper.
  4. Stir well.
  5. Garnish with the celery stalk and cherry tomato.

  • 1 oz / 30 ML clam juice
  • 1 pinch Old Bay® Seasoning
  • Juice of 1 lemon slice
  • 1 shrimp, tail fan attached, for garnish
  • Oyster crackers
Directions:
  1. Mix the first seven ingredients and then combine with remaining ingredients in a shaker.
  2. Shake well.
  3. Pour into an 8 oz / 240 ml wineglass filled with ice.
  4. Garnish with tail-on shrimp and serve with a small bowl of oyster crackers.
