Valeria, è proprietaria del ristorante vincitore di due stelle Michelin "Da Caino" a Montemerano (Grosseto) e collaborerà con il nostro Executive Chef Michele Griglio nel ristorante "Winter Garden by Caino". Tra i piatti signature svettano lo “Scorfano, carciofi e brodo di calamari” o il “Trittico di trippe e lampredotto” in 3 delicate varianti, ma sempre profondamente toscane, o le “Pappardelle verdi accoppiate al formaggio di fossa con asparagi e pancetta” accanto ai “Pici con pomodorini alla brace, piselli ed alici fresche“ unitamente ad una rivisitazione destrutturata del “Caciucco” che colpisce occhi e palato. Tra i main course protagoniste stagionali le carni, con l’ “Agnello con crema di peperoni menta e millefogiie di melanzane” o il “Piccione arrosto con ciliege, mandorle, barbabietole e rapanelli”. We are proud to announce the new collaboration between The St. Regis Florence and the multi-Michelin star Chef Valeria Piccini. Valeria owns the two Michelin star restaurant “Da Caino” in Montemerano (Grosseto) and will work together with our Executive Chef Michele Griglio in the restaurant “Winter Garden by Caino”. Among the signature stand-out antipasti include “Rockfish, artichokes, and calamari broth” or the “Trio of tripe and lampredotto” in 3 delicate versions, but always profoundly Tuscan, or the “Green pappardelle accompanied by cave-aged cheese with asparagus and pancetta” as well as “Pici with roasted cherry tomatoes, peas, and fresh anchovies” or a deconstructed revisitation of the typical Tuscan fish soup “Caciucco,” which surprises the eyes and palate. Among the main courses, seasonal stars are the meat dishes, like “Lamb with cream of peppers, mint, and eggplant millefoglie” or “Roasted pigeon with cherries, almonds, beets, and radishes.” Dessert highlights, in a true triumph of aromas, include the “Chocolate twist with wild fennel and hazelnut sorbet” as well as an amazing “Emulsion of orange with extra virgin olive oil, goat’s milk gelato, and false Peruvian pepper” or “Strawberry soup with yogurt mousse and red pepper and raspberry sorbet."
