Located on the resort’s lobby level, the St. Regis Bar and Wine Vault welcome guests with a simultaneously timeless and modern atmosphere, where nightly live music enchants and a daily champagne sabering ritual recalls the resort’s esteemed heritage.

Smooth black Chinese God Flower Stone marble floors correspond with the antique-mirror backed bar and dark wood accents. Cool blue, grey, golden, and purple hues recall the resort’s oceanside location, visible through a wall of windows or from the bar’s outdoor patio, where tables and chairs look towards the horizon. Back inside, an iconic mural titled “Eyes of the Stars,” by local artist Santiago Rubino, perfectly captures the contemporary, elegant atmosphere.

Small groupings of chairs as well as plush couches lit by ornate lamps provide intimate spaces for a before or after-dinner drink, including signatures like the Cucumber Aficionado, a refreshing blend of Chopin vodka, cucumber juice, and lime, topped with a spritz of pickle brine. Other favorites include the bar’s take on classic cocktails, including a Pisco Sour or Mojito. All beverages are agreeably paired with the bar's signature six-olive selection and seafood-focused tapas-style appetizers from Barcelona-trained Chef Tom Parlo. Sample the artistic Lobster Salad Salpicon, featuring fresh Maine lobster, or try the crisp Seafood and Sherry Croquette, laced with creamy seafood béchamel.

Adding to the exceptional atmosphere, the Wine Vault continuously invites guests for tastings. Featuring a versatile selection of New and Old World wines from both high-end and small growers, the vault houses approximately 2,500 bottles from 450 vineyards and 14 different countries. The vault's 14 temperature zones ensure that each is perfectly preserved, including the prized 1989 La Tache Domaine Romanee Conti. Additionally, the vault offers a rare selection of specialty cognacs, scotches, tequilas, rums, and whiskies, all ideally stored at 62 degrees. Guests may also commission our expert sommelier to assist them in selecting a bottle of wine to share in any of our restaurants.
